One step further to even better food…

Today  we started work on the Califa organic
smallholding in La Muela, a hamlet and farming community just a few
minutes drive from Vejer. Although we have been using organic
vegetables and products as much as possible over the last few years
we came to the decision that in order to get a full range of fresh,
locally grown organic produce growing our own vegetables would be
much the best way. Straight from the earth to the table. People
often ask me why we don’t publicize more our sustainable and green
ethics and our use of organic products. My answer is always the
same that it is not our job to educsate people, we do this because
we know its ethically right and in the restaurant our food just
tastes that much better… We first ventured on the sustainable
path by installing solar panels for our hot water system in the
hotel in 2001. These were the first solar panels in Vejer. From
there we moved on to recycling (where possible) and energy
efficient systems in the hotel. In the Jardín del Califa we have
had organic wine on the menu for 2 years now and about 20% of our
vegetable produce is certified organic. We have been using 100%
organic cane sugar in all our desserts and pastries for the last 12
months and over the next weeks we will be experimenting with
different organic flours (from a supplier in Malaga) with the
intention of making our full range of pastries fully organic and
even tastier. Eggs and poultry are free range and our beef is the
local Retinto breed 100% organic from local Vejer farms. Up in La
Muela we have teamed up with Juan Garcia (owner of the land) and La
Campesina Producción Agroecológica who will be managing the
‘huerta’. Under the enthusiastic hands of Paola, Juan and Fran we
will be growing a wide range of vegetables and herbs, interesting
varieties of rare tomatoes and okra and numerous other varieties in
an effort to see what grows best and tastes even better on the
plate at Califa Tapas and the Jardín del Califa.
